MakiMaki Sushi began with a simple idea: make quality sushi more accessible. Built in New York City, the brand grew by offering fresh, made-to-order sushi through a model shaped by efficiency, consistency, and everyday demand.
What started as a focused sushi bar in Midtown Manhattan grew into a brand with a clear point of view. MakiMaki Sushi was built to sit between traditional sushi dining and pre-made grab-and-go, giving customers a fresher, more convenient option.
With made-to-order rolls, a streamlined assembly line process, and strong demand in New York City, the brand developed a model that balances quality, speed, and consistency. That same operating story now shapes MakiMaki Sushi’s next chapter in franchising.
Today, MakiMaki Sushi is bringing that New York City success story into franchising, giving early franchise partners the chance to grow with a brand built by Kevin Takarada and shaped in one of the toughest restaurant markets in the country.

Kevin Takarada founded MakiMaki Sushi after seeing a clear gap in the market for sushi that felt both high quality and easy to enjoy. Drawing from his background in engineering, finance, and hospitality, he built a brand focused on fresh, made-to-order sushi with a more modern approach to speed, consistency, and convenience.
Raised in a restaurateur family and deeply connected to Japanese culinary traditions, Kevin brings both personal history and practical vision to the brand. His goal with MakiMaki Sushi has always been to make quality sushi more accessible while creating a model designed for today’s customers and tomorrow’s growth.
